Summer Cocktails in the Cotswolds

No summer shindig is complete without a glass of something novel and refreshing – the kind of drink that will have your guests begging for the recipe. A light and invigorating hit of fresh summer sparkle that’ll keep the kids (and designated drivers) happy. Here are two of our favourites…

INGREDIENTS Serves 4

400ml sparkling elderflower pressé

200ml good quality cloudy apple juice

8 sprigs of mint

8 cucumber ribbons

Dash of soda

METHOD

1. Mix the elderflower pressé in a jug with the cloudy apple juice.

2. Add the sprigs of mint and the cucumber ribbons and stir well.

3. Serve in ice-filled glasses and finish each with a splash of soda water and a sprig of mint.
ENGLISH GARDEN COCKTAIL

Summer-sweet, punchy and potent, this zingy citrus cocktail will cut through those meaty barbecue flavours and liven up the party no end.

INGREDIENTS Serves 4

60ml Limoncello

240ml Grey Goose vodka

4 lemons, juiced

30ml sugar syrup

200ml soda water

Slices of lemon to garnish

METHOD

1. Stir the limoncello and Grey Goose vodka together and add the juice of four freshly squeezed lemons. Add the sugar syrup.

2. Pour into rounded tumblers filled with ice and top up each with 50ml soda water. Garnish with slices of lemon.
